Not Really Egg Foo Young, But It Is: Spilled Milk #121

But sort of … I mean it is egg foo young, really. But….
I have made it a habit to never us the word ‘but’ and instead always use the word ‘and’. Sometimes I even have to rewrite the sentence, however, trying to eliminate that word has been a personal goal for almost 10 years, so the whole top of this post is sort of a self-indulgent jab at myself and the world we live in.
I love Chinese food, and once a week I make a fried omelet in the style of egg foo young for lunch or dinner. So why don’t I call it egg foo young? I think because if I am re-creating this Chinese American classic, I would be more fastidious about the technique and ingredients. I would want to honor the dish properly. This is just my go-to dinner for one…that I always end up making six of because my friends and family have a sixth sense about when I am making it.
I don’t hold back extra beaten egg to cover the top and encase the filling. I don’t mind the dish being a tad uglier than one I would make for you if you came to my house for dinner. You see it’s not that I can’t make it look perfect, it’s just that when I cook for myself I care less — and over the years I have decided that like eliminating the B word, I gave up pretty long ago in favor of flavor. If it tastes good, I mean really really f*cking good, then that’s all I care about.
