So over a year ago, at age 59, after 44+ years working in the food biz, I finally learned that the chicken wing’s center link, the piece between the tip and the drummie/drumette was called the flat. Who knew???
Now that I know what the three pieces of a wing are called, I ask you:
Which chicken wing part is better: drummies or flats?
I don’t want to hear anyone talk about the tip or make any tip jokes, although when I roast a whole chicken if the tips overcook and the whole tip gets brown and intensely crispy, it’s pretty darn good to chew on, like jerky. And for what it’s worth, I like the flats and don’t like drummies much at all, comparatively.
