Summer comes alive with this amazing corn succotash with chorizo that rests under any meat or fish off the grill. You can add more butter and pasta water to sauce any noodle shape, and serving it under gnudi is a fun way to make a killer vegetarian-ish dish.
Gnudi are sturdier versions of a filling for shells or ravioli, and I encourage you to make them once the way the recipe indicates, and as you get better at making them, gradually reduce the bread crumbs and flour bit by bit. They will get lighter and lighter…GAME ON!
