I’m a mess. Too much travel this week, so apologies for no traditional video, but here are the two recipes I made at the Cayman Cookout and pics of each.

I love cold food for lunch, and I love lunch for dinner, so these are both main dishes I eat year-round. There is a lot of learning and fun components here so even if you don’t make all the parts of all the dishes for these specific recipes you will have a lot of cool stuff in your back pocket.

  • My cured gravlax

  • The citrus salad

  • Tomato water

  • My pizza dough/flatbread recipe

  • Potato crisps

I make the dough in wintertime, roll the balls out to fit inside a cast iron skillet and blister-cook them in there to serve with leg of lamb, kebabs, curries and so much more.

I typically slice the potato crisps for the salad like a chip but for this demo and in the pics you will see I did fine angel hair julienne. You do what works for you.
