My Favorite Meats, Fish and Wild Game for Grilling
Summer is here. What are you grilling?
It’s Memorial Day in the USA.
And this one is really hard.
For some it means a day off from work, grilling and get-togethers, maybe a weekend away or big sales at retails stores. That’s great. But let’s not forget what this holiday is all about. Today is about honoring those Americans who have fought and died for our country. Please take a moment today to reflect on those who’ve made the ultimate sacrifice, what it’s meant to their families and loved ones.
In the wake of the Uvalde killings we find ourselves at an inflection point once again in our cultural battles in America. Regardless of where you sit, we can all agree that keeping those families in Texas in our hearts is vital to our civic progress…and Tuesday morning let’s do EVERYTHING we can to make sure this never happens again.

I’ve been eating a lot less meat these days— for my health, for the planet, and yes, for my wallet. When I do eat meat, I want it to be the good stuff. I am willing to pay more for something raised more sustainably, and I save money by simply eating meat less often.
With that in mind, I’ve created this list of some of my favorites– from Waygu beef and Kurobuta pork to sustainable striped bass and wild game. I’ve included some links to recipes in the post as well. You can follow them to the letter, or use them as inspiration. There are some affiliate links here, but all opinions are mine.

Kurobuta Pork
“Kurobuta” is the Japanese name for pure-bred Berkshire pigs, with a feeding regiment designed for maximum marbling and a pH that retains juiciness (similar in concept to what they do with Wagyu cattle). From loins and chops to bacon and short ribs, there are many great options to choose from.

Waygu Beef Hot Dogs

Want to add more fish into your diet? Try this striped bass. Raised in Baja California, Pacifico has a clean mouth feel and a semi-firm texture. It’s a versatile fish, ideal to cook with because the fat content allows for many preparation methods, including whole, raw, grilling, poaching and braising. Cooked it has a flaky texture with a skin that crisps beautifully.
