What do you think of when I say the name Las Vegas?

First thing I think of is the food. Over the last 30 years, Las Vegas has cemented itself as one of the most intriguing, interesting and delicious food cities in America. The explosion of the service economy in the desert, combined with the spread of low-income housing far beyond the city, has allowed for some of the best food in America to be cooked within this city’s limits—especially when it comes to a whole host of Asian cuisines. It’s not insanity to make the claim that Las Vegas serves some of the best Asian food of any city in America. Add to that so many delicious restaurants off the Strip and, of course, the temples of gastronomy and excess on the Strip, and you have a fascinating food town that I find myself in once a month for sports events, conventions, work and most often a great concert. Now that the Sphere is open, I go to Las Vegas five or six times a year, and I’ve gotten to discover a lot of really great food that I never would’ve had time to check out before.

So, here’s the deal. This is a big list because the variety in this city—let’s call it the breadth—is absolutely staggering. Enjoy your next couple of meals in Las Vegas. I am headed there for Dead & Co.’s last weekend, and I am hitting up six of the places on this list. And then hitting the blackjack tables.

I know there are a lot of omissions. All errors are mine alone. And these are not in any order of excellence. Browse the list! There is something here for everyone.
