Chicken thighs are one of the most underrated proteins out there.
Last week I posted my creamy chicken with Meyer lemons and dill and it blew up. So, maybe we’re onto something here in January. Perhaps chicken is the meal du jour for the dead of winter. What do you think?
Don’t skimp on the sauce in this one-pot dinner because you’ll use it in other meals over the course of the week. Today it’s chicken thighs, but tomorrow it might be steamed fish, or drizzled into a wok toss with pork, or just reheated and served over rice.
