There are so many styles of this incredible Vietnamese dish.

Different sizes, fillings, wraps (some cooks use rice sheet wrappers), but the vast majority fit this model and all SIZZLE, which is what the dish’s name means.

Anyone who has eaten these crêpes loves them. I serve banh xeo for brunch a lot, too. Everyone loves to eat them, but very few attempt to cook them. The crêpes are sturdy and easy to make, very forgiving, and all you do is fold them over the filling and enjoy with your favorite version of nuoc cham (« that’s a link to my recipe).

This is street food; humble, despite the cost of seafood in our country. But with just a small amount per crêpe, it’s a great way to stretch your seafood dollars.
