Doesn't compare at all to domestic meat. Honestly, if I hadn't been told it was sheep, I wouldn't have known. I would've guessed venison. It didn't have any of the flavors I associate with sheep/lamb.
A lot of meat flavor comes from fat, which is way more variable than meat itself. And there wasn't any fat on the pieces I got (chunks in a stew).
I won't likely get a chance to taste more - I'm a tough old goat, but sheep hunting is for people far more durable than me.
Kudos & Applause... Wild Game Kitchen is a superbly well done series, and hope it becomes a staple on the Outdoor Channel... So far I've made 7 of your offerings. When I conjure comfort foods and the WGK that Wild Duck Gumbo w/ Crispy Duck Breasts was terrific. The other comfort dish that brings me home to Sunday dinners is your Braised Brisket w/ Fennel & Onions, yet I add sliced portobello mushrooms, and use small cipollini onion varieties.... My grandma's was almost exact to your preparation, yet w/o the fennel, which apparently my father & younger brother didn't like it, so I was deprived from the age of 4 ~ Damn!! It's a wonderful, underrated veggie., so many variations warm & cold... thou undiscovered until I had a huge Italian feast at my best pal's very traditional Italian family's house, 5 years later... I'm making lentil soup right now, which has always been comforting to me. I need comfort....waiting for a hurricane to hit. Yeeesh I think I need to relocate. I'm over it.

Having a party in a few weeks and I find that one guest is lactose intolerant and another has celiac disease, although she just told me that it might be Hashimoto’s syndrome and to make it interesting two other guests are high protein KETO only. Need some non conflicting ideas for 6 adults and one child. In the past I’ve made an almond cake with elderflower icing, nobody raged on me. It just seems that everyone wants there private menu.
What is the best way to cook with your favorite person who is starting to forget their staple recipes? My Yiayia (grandma) is 90 and starting to forget things in her own recipes bringing some sadness to me and frustration to her
