We have the same "problem" with giant zucchini (it's a good one to have!)! This is an old Midwest family recipe for Zucchini Pie - you can use the giant ones for this dish and they work just fine! I call it pie only because I used a pie dish! There is no crust.

Zucchini "Pie"

You'll need:

1 good sized zucchini - cubed. Leave peel on. Par-boil this for 5 minutes and drain really well.

1 medium onion - rough chop

1 sleeve of Ritz crackers - crushed

Shredded cheddar or cheese slices

3/4 stick of butter

**Can also add fresh sliced tomatoes and fresh diced jalapeno​​**​​

Directions:

Spray a pie dish with Pam.

Layer half the zucchini and half of the onion in the dish. Season with salt & pepper, add half of your shredded cheese or cover with cheese slices

Repeat with remaining zucchini, onion & cheese

Add tomatoes and jalapenos if you wish

Season well

Top with crushed crackers and drizzle with melted butter

Bake at 350, uncovered, for 30 - 40 minutes or until golden brown

I agree with Sweet Melissa. I too would volunteer for the Zimmern Hand-Holder position. Only requirement is that he would have to agree to never expect me to share potato pancakes because I think I need them all. He would also have to cop to the fact that anyone that remembers Jello Pudding 1-2-3 from the late 60s or early 70s isn't crazy. I swear...THIS EXISTED. It was some weird astronaut-inspired dessert. I wasn't dreaming. ????was I????? A small price to pay for warm hands and bear hugs. Good for all!

Ok, first of all…your friendship just makes me smile. Not in a creepy way…just love seeing how much fun you guys have together. Now on to giant zucchini talk…I don’t grow them anymore for the same reason, not my fav & they are pretty obnoxious in the garden. But I did plant 1 last year and had a hider… when I spotted him he was enormous!

I did similar to what AZ recommends…sliced it long & thin on mandolin, (full length of that guy) let it dry a bit, then grilled it gently on cast iron flat top.

Used it as the “noodle” in veggie lasagna! One of the best veggie accidental dishes I ever made! Layered it with all the other goodies from the garden & cheese. Used an eggplant as a sub for the meat in the sauce….so stinkin good.

Good on all the “ hand-holder “ volunteers! It’s been a long crazy month & im feeling like maybe I could use someone on my team to hold my hand as needed! 😅 However guessing the applicant pool might be a bit sketchy…maybe if I layer some duties like slicing my nectarine’s & unwrapping my Rolos & Neccos it might heighten the caliber? 😂
