Okay, made this yesterday. I substituted gin for wine since I had it on hand. I added fennel seed, and parsley. I stuffed some of it and left the other minced for patties. The patties at breakfast this morning were simply delicious. This will now be in my regular rotation for sausage. Thanks for a great share!

In my ongoing effort to try & eat healthier & leaner…sausage always got bypassed. But I love it & decided to try & make my own, but less fatty.

Yes! It is so easy to make…took a couple of attempts to get it right, I don’t even bother putting it in casing, I was mainly making to use on pizza or in sauces etc.

I like your recipe…will give it a try.

I tried making chorizo once & that was an epic fail! And completely turned me off of chorizo! 😂 just typing this & I gagged a lil. 😂🤢

We made a lot of sausage in Wisconsin when my grandMother took the train up from Milwaukee. I loved helping out with casing. And eating it.
