Awesome recipe! I liked the 'safe' instructions throughout, especially with going slow first and speed later. (I remember watching 'Yan Can Cook' years ago with his 'speed', always made me nervous). I really like the 'claw posture' explained as well as the 'carrot technique', just simple to keep it from rolling. Also choking up on the knife for more control...Mad Skillz indeed...!
Thanks for this! I've wanted to improve my knife skills and look forward to the series. When using the same knife to cut multiple foods or veggies should I wipe the knife on a towel, wash it, or just keep going? I can't think of a fourth option but if there is one I'm all ears!
