I peeked through your playlists on Spotify and was happy, not surprised, to see that we had overlapping tastes. Lots of great stuff on your musical tray. Music is what I think of first, almost every day. Love Warren Zevon, Grateful Dead live in Europe and the talking heads. Also glad to see that Beck’s Beercan made it into the kitchen and the road trip. Wasn’t it Warren Zevon who said to “enjoy every sandwich” ? It’s the little things in life. Jack White’s Lazaretto is bread kneading music.

I was just reviewing my 'Eater' newsletter, and lo-n-behold, lead article, "An Expert’s Guide to Eating the Minnesota State Fair"... I clicked on-it and thought, "This is without question AZ's wheelhouse.!!!"

SOooo, even though I skimmed the article, all of your favorites seemed to be listed... yet NOT ALL... My music choices hinge on what I'm preparing... Robust Italian, perhaps Opera; something more simple, French, Italian & Greek, whimsical instrumentals of respected countries; Gameday fare, driving American Rock'n Roll; Soul foods deserve Blues, Jazz & Hip-Hop; Retro-styles meals, depending on the decade, are honored with 50's, 60's, 70's etc... Food & Music for me, are like Beer & Pretzels (being a Milwaukean), Brats & Sauerkraut, Spaghetti & Meatballs, Bacon & Eggs, Strawberries & Cream... you name it, there's music for it...

All good advice. As I enter my 7th decade I don't do anything as fast as I once did, including slicing & dicing. It is just a fact of life. Years ago I spent a day in Charlie Trotter's kitchen and was told I had good knife skills. It is one of the high points of my life.

So glad you endorsed the cut resistant glove and didn’t do the pretentious chef thing and just say, “you are doing it wrong”. There are a lot of people who will enjoy cooking or learning to cook a lot more using one and feeling safe. Many people in this world don’t have the best fine motor skill due to age, disability, or lack of practice. Do whatever allows you to enjoy cooking and, as you encouraged, improve your technique along the way if you can!
