Ask Me Anything: Why I'm Such a Fan of Farmed Seafood
I also talk about my favorite food at Disneyworld, why I love Minneapolis and more.
Happy almost Fourth of July! I’m not in a hotel this week! Getting to answer your questions is one of my favorite times of the week. If you like this feature, subscribe, get in the comments and ask me … anything: In recent weeks I’ve talked about disc golf, great places to eat in Cleveland and my favorite olive oils. (No questions about movies this time?)
Here’s some more information on my upcoming documentary, “Hope in the Water.”
This week’s questions
Pam:
My question is regarding farmed seafood...apparently, you are comfortable with this idea. I feel this industry needs couple more years to be on top of regulations and perfecting the technique so that it's totally safe for human consumption. I can't stand the idea of shrimp (as an example) being held in an enclosure and given antibiotics. And the water/enclosure not being properly cleaned.
On the other hand, our ocean waters are being so contaminated (because of humans), aquaculture seems like an acceptable way.
What is your opinion??
Mel:
You recently wrote that Einstein Bros. bagels are the worst airport food. Costco bagels are Einstein-made and I find them delicious and chewy. The Everything have a few anise seeds on them which give a surprising burst of an unexpected flavor. The Cinnamon Raisin are so chewy that I gnaw on them without any toppings, like a woman obsessed.
Perhaps all Einsten bagels aren't created the same?
Sam:
As someone who is not from Minneapolis but settled here, I’m curious what brought you to MN and what kept (or keeps) you here?
Lucas:
Fave foods at Disney parks, both junky and quality? ALSO: Any plans to visit Australia anytime soon?
Anthony:
What topping(s) would you suggest including on a beef rendang taco? So far, I have a roti flatbread, beef rendang, Acar, and need something more.
Cwaldenspond:
What is a good bouillabaise?
James:
What is your go-to snack?
Jeff:
Are you watching the show “The Bear?” If so, what are your thoughts?
Robbatey:
More Family Dinners on the way?

As a chef, what do you do while you wait for inspiration to create something new?
Beautiful story Chef about why you stay in Minnesota. Never been but I worked with people in Eden Prairie a lot, and one day I'll go to Paisley Park!
Favorite food-related movies other than Big Night? Thoughts on Casa Bonita which recently reopened in Denver? Have a great 4th of July weekend everyone! 🎆🎇🧨
