Made an absolutely fantastic smoked chili this spring! Put all the veggies, beans, etc. In a Dutch oven and put a "meatball" above it and ran the smoker until the meat was fully cooked. Shredded the meat and put in chili sauce for another 2 hrs before serving.
Though we live in a city, my son is a member of 4H. We grew tomatoes, basil, & onions to make our own pasta sauce. We then learned how to pressure can and preserved our sauce. We decided to expand our skill set and made homemade pasta to accompany it. Submitted to our local fair where he earned a blue ribbons for both.
Xmas eve seafood paella. Lobster, shrimp, scallops and shellfish. Hardest part was making the seafood stock. One pot meal fed eight. I don't know how to put a picture on here but it was beautiful
8 hour smoked beef brisket! I was so proud when I could see the smoke ring and when slapped, the brisket jiggled! Been smoking since 2013 but for some reason the brisket was a scary undertaking that I kept putting off. SOOO much better than at a chain BBQ restaurant!
I was very proud to try my hand at homemade miso ramen complete with marinated ramen eggs and braised pork belly! Turned out good but not AZ good. I'll keep trying. ;)
Man, I was geared up to show off pics of my 2021 greatest hits…appears can’t post pic in comments..but let me tell ya….perfected beef bourguignon! Big garden this year so all kinds of roasted & grilled dishes. (Used your carrot & ginger dressing often) Killer paper thin pizza on the grill! All things seafood & udon! Thanks for introducing me to chili crisp!! A magazine cover perfect rhubarb tart. She was pretty! And I’ll leave ya with thoughts of my coconut macaroons…dipped in a bit of dark chocolate! They are pretty dreamy. Happy New Year!
Hello Andrew! I hope you are having a wonderful Holiday Season! I got a a wood pellet grill / smoker 2 summers ago and am having a lot of fun using it to perfect some of my family's favorite dishes, like my korean BBQ short ribs with brussels and also my first attempt at a smoked flank steak with grilled potatoes and corn!
This year I learned how to make really good jerky from lean ground beef. And my usual Thanksgiving spread. (repeated for Christmas as a rib roast was soo far out of the budget this year), Turkey Breast in the Instant Pot ala Rootitoot, Trying to remember my late mother in law's dressing recipe. (Kid thought I was close last year, now it's been too long to remember), Cheesy veg, the standard green bean casserole, Rhode's rolls. And gravy..always lots of gravy for mashed taters and the dressing. Cheesecake using the IP for dessert. Boys had theirs plain. I used some of the cranberry sauce. (Yeah pics not happening here but they are on Facebook)
I made the best Fijian style fish curry in May.
I LOVE IT

you are so right, and nothing better looking than a nice smoke ring on a brisket
Jambalaya with andouille from Corralitos Market in Corralitos, CA. Squid tubes stuffed with sausage and tentacles.
Stuffed squid is so under rated... good one

-Fermented green tomatoes in a 3-gal crock old European style with jalapeños and carrots, Jewish escabeche?
