Well you've tugged at my heart on this one! My dad came from Balestrate, Sicily....a beach town near Palermo. I've been all over that island many times and still have cousins there. If anyone on this forum goes to this specific region of Sicily, check out my cousin's tour company, "Attavola Tours." He does a great job and would add to Andrew's already awesome list of places to eat (and things to do.) I love the beauty of Sicily, the food of Sicily, the people and history of Sicily, and most of all that my wonderful dad came from this magical place. And only you could pull of Amalfi coast inspired chicken wings, Andrew! ;) Another beautiful region, the Amalfi Coast. Bella Italia!
Can't wait to get back to that area and try some of these recommendations.
We just spent a week in Sardinia, and were surprised by all of the locally grown food and how different it was from what we were expecting: melon, miele di carbozzola, sardi, bottarga. A bit of a trip to discover they also grow rice there!

Very nice on Italy, I've never been, now I have to find time to explore! I've been to other parts of Europe, very lucky with that, but never made it to Italy. I'll definitely keep these places and tips in mind, especially Mimi's and Bacco (both under Option No. 2)!
I have researched though, even though it's not Italy 'now', but was in the past, 'sort of', is Corsica. Very interesting history and culture, just to see what their dishes are and the 'everyday people' there....
Hey Andrew. So I started a food club here on Long Island that focuses on ethnic or themed nights. Idea is to get people out of their comfort zones by eating traditional or authentic dishes they usually don't eat, at restaurants they usually don't go to. Some are a little more adventures than others, of course. The next one (hey, "Italian" is ethnic too!) is Naples/Amalfi night at at Saverio's, which I believe you know well. Any must-adds (other than pizza)?
Hmmm... Sicily, the Amalfi Coast & Naples... YES.!!! Why choose?!! One of Italy's "Trifecta"... I drove from Naples all the way around point to Amalfi... Stayed a few days in Capri, then we took a Ferry to Sicily which was breathtaking....
ALL of IT.!!! That's the beauty of Italy, Sicily even Sardinia, each region has it own unique character, both within the cities, and many times more so exploring the various countrysides... So asking what's your favorite 'Region', is like asking "What's your favorite 'Road Trip' song.?? (all are still waiting for that answer)...
I use to travel to Italy 4 times a year for 10+ years as a fashion consultant... After 12 days of 14 hour dayz (not a typo), The group would take a 2 week break before returning stateside. I was able to see all of Italy, Sicily & Sardinia which was absolutely wonderful... the people are warm, friendly, inviting, you kinda feel like a long-lost family member, it's terrific.!!! Yet after seeing all of Italy, the place I returned to every year was the island of CAPRI.!! As a huge seafood guy, Capri, it's a seafood fanatic's dream, thus the place for me... I've seriously considered relocating to Capri to live out and enjoy all it has to offer, whatever that may be...??
I have dined at a number of the restaurants on your various lists... The Amalfi Coast is magnificent road trip, with or without music... the benefit of NO music music, is you get to feel, hear, smell & see the Amalfi Coast, it's a grand experience.!!
